I’ve been in love with almond butter since last year when it became really popular! I love to spread it on toasted cinnamon raisin bread and dip apples in it. I also really love adding a big, heaping tablespoon of almond butter to my green smoothie bowls.
I made a batch of homemade almond butter with our new Blendtec blender and don’t think I’ll ever buy store-bought almond butter again! It is SO EASY to make at home and if you buy the almonds in bulk, it’s a LOT cheaper! (About $6-$8 per jar instead of $12-$14).
At first, I was really intimidated to make my own almond butter, but it’s super simple! You literally throw the almonds in the Twister Jar (or a food processor) and blend until smooth. That’s it! Last week at Target, I spotted a can of Blue Diamond’s Salted Caramel almonds and immediately knew I had to turn them into almond butter.
Have you heard of Elli Quark? Until a few weeks ago, I hadn’t either! Elli Quark is a fresh cheese, similar in texture to greek yogurt, but less sour and more protein (14g to be exact!). I also love Elli Quark because there are no added sugars or artificial sweeteners and it has about half the calories of greek yogurt (click here to receive a coupon for Elli Quark).
Now do you want to guess what happens when you combine homemade almond butter with Elli Quark? You get this amazing, creamy and delicious Salted Caramel Almond Butter Fruit Dip! I have been using this for apples, bananas, and even pretzels! Simply combine homemade almond butter and Elli Quark and if you want some extra sweetness, add a splash of honey.
